Have you ever had Elote, that delicious Mexican street corn on the cob? Grilled over hot coals and slathered in Cotija cheese, Mexican crema, mayonnaise, garlic, cilantro, and powdered chili, this dish is a popular snack served from street vendors’ stands in Mexico. It’s addictively delicious!
I hadn’t had one for years but recently had a real craving for it. I was obsessed with trying to create a vegan version and it was certainly possible. There are some good vegan cheeses that could pass for Cotija and the other ingredients are not hard to find.
The trouble is that I sometimes want grilled corn at a time when it’s not feasible to stand outside over a BBQ. With the weather hitting 102 recently, I’m choosing easy meals and staying cool!
And I didn’t want it to be loaded with the calories of all those toppings. My version is about 360 calories. I don’t even want to imagine what the original must be!
And I wanted something that could be put together in minutes.
Sure, you could do the same thing by starting with grilling your own corn and go from there.
But this is a Quick & Easy recipe and I want it now!
This recipe has THREE ingredients. That’s it. Keep them in stock and you can have this version of Mexican Street Corn anytime the mood strikes you.

I’ve tried several vegan mayonnaise brands, but Just Mayo by Hampton Creek is the best in my opinion.
My secret ingredient is also from Trader Joe’s and one of my college daughters turned me on to it. Trader Joe’s Chili Lime seasoning mix. The label says “The classic sprinkle for fresh jicama, mango, and pineapple and is a delicious enhancement to grilled meats.” You know what else it enhances? Grilled corn!
